Description

Let’s learn how to cook a very traditional pasta with a quirky shape that speaks of one of our deepest traditions in Liguria.

Correzetti pasta is part of the Ligurian cuisine from the medieval age. This pasta is made by pulling the puff and cutting circular pieces (about 3-4 cm in diameter) with a final touch achieved by implementing a decoration on each piece. The decoration is made by using an embossed stamp-like tool with drawings of all kinds, like coats of arms of every noble house. We will also prepare a classic and delicate sauce to go with it, the walnut sauce.
